Homemade Sausage Recipe

Homemade sausage is a true traditional delicacy that not only delights with its rich taste but also allows us to consume a natural product without artificial additives. Thanks to preparation in an autoclave, homemade sausage retains its unique taste and aroma in jars for long-term winter storage - an ideal option.

The classic homemade sausage has a rich flavor, combining two types of meat: juicy pork and tender beef. Spices such as salt, pepper, onion, and garlic give the sausage vibrant flavors and charm, while bay leaves create a delicate aroma. This combination of ingredients highlights the taste of homemade cuisine. Every piece of sausage is filled with childhood flavors that leave no one indifferent.

Homemade sausage tastes great with regular bread. It is served with various sauces, such as mustard, tomato, or homemade mayonnaise. Highlighting traditional Ukrainian cuisine, it can be served with sauerkraut and pickles. Homemade sausage also makes a delicious addition to roasted vegetables, side dishes, or as an appetizer for a festive table.

Recipe for sausage for 2 jars of 1 liter each.

Ingredients

  • Minced meat, pork and beef
  • Pork casing
  • Garlic
  • Onion
  • Salt
  • Bay leaves
  • Black pepper and peppercorns

Step 1

Mix the pork and beef minced meat. Add salt and pepper.

Step 2

Grate the onion and garlic and add them to the minced meat.

Step 3

Thoroughly mix the prepared minced meat. If the beef mince is too dry, add a little water.

Step 4

Prepare the pork casing. Rinse with water, tie a knot at one end. Stretch it and wrap it around the meat grinder tube for stuffing.

Step 5

Take a piece of the minced meat, place it in the opening of the meat grinder, and at low power, stuff the pork casing. Air will come out first; for this, it needs to be gently pricked, then tied again.

Step 6

Make the sausage in the casing tight, holding the other end where the knot is.

Step 7

Twist the sausage rings, tying the pork casing at both ends.

Step 8

Place the stuffed sausage into one-liter jars. Add a few bay leaves and peppercorns to each jar. Do not add water.

Step 9

Close with twist-off lids. Place the jars in the autoclave. Cook the homemade sausage at a temperature of 110 degrees for 40 minutes.

Step 10

Take the sausage out of the autoclave and enjoy the unusual dish.
