Goose stew in the autoclave is one of the most delicious and aromatic poultry meat preserves that can be prepared at home. Goose meat has a rich taste, tender texture and high nutritional value. Thanks to autoclaving, it is not just stew, but a real delicacy. The autoclave provides the correct temperature regime and complete sterility of the dish — and this is a key factor for dishes intended for long-term storage.

Cooking stew in the autoclave allows you to get the desired result: the goose meat turns out juicy, tender and falls apart into fibres, the fat gently melts, envelops the pieces of meat and creates a natural, rich broth-sauce. That is why goose stew in the autoclave is considered one of the most aromatic — its taste is deeper and more expressive than stew made from broiler chicken or turkey.

The autoclave allows you to cook poultry stew without unnecessary hassle — it is enough to place the meat into jars, correctly set the temperature and cooking time for the stew in the autoclave. Ingredients for goose stew

Step 1

Cut the goose into smaller pieces. If desired, you can separate the bones from the meat.
