Recipe for canned fish in an autoclave

Hake Fish with Beans in an Autoclave, – a harmonious combination of tender fish meat and rich flavors of vegetables and legumes. Thanks to the special autoclave cooking technology, the dish retains all its beneficial properties and unique aromas.

The recipe for fish in an autoclave includes many ingredients, but the main one is hake. This fish is known for its delicate flavor and lack of excessive fat. In the autoclave, the texture of hake becomes especially tender, and the flavor – rich. Beans add heartiness and a light legume aroma to the dish. Carrots and onions provide a sweet and spicy note, while garlic adds a piquant touch and balances the flavor. The refined aromatic composition is completed by bay leaf, black pepper, and dill.

Hake stewed with vegetables can serve as a standalone dish, but it also pairs well with side dishes: mashed potatoes, fluffy rice, or buckwheat. The preserve is perfect for both a quick lunch and an elegant dinner. Ingredients for hake

  • Hake fish 6 pcs
  • Carrot1 pc
  • Garlic2 cloves
  • Onion1/2 pc
  • Beans
  • Salt
  • Sunflower oil
  • Bay leaf
  • Black pepper (ground and whole)
  • Dill flowers

Step 1

Prepare hake fish – clean 6 medium-sized fish from all excess parts, trim fins, and tail.

Cut the cleaned fish into small pieces, season with salt and pepper, add sunflower oil, and mix well.

Dice the vegetables: 1 carrot, 1/2 onion, and garlic.

Prepare the jars. Place 1 bay leaf in each jar. Add a layer of fish.

Add a little carrot on top of the fish. Add a few black peppercorns.

Add cleaned beans; if the beans are not young, it is better to pre-soak them.

Layer again: another layer of fish, a layer of onions and garlic, and a layer of beans.

Seal the jars with twist-off lids.

We load the filled jars into the autoclave. Cooking time of fish in an autoclave:
  • If the thermometer is in the upper part of the container - 30 minutes at a temperature of 105 degrees.
  • If the thermometer is in the lower part of the container - 30 minutes at a temperature of 115 degrees.
