Eggplant caviar is a classic loved by many generations. Its delicate texture, deep vegetable flavor, light piquancy, and versatility in serving make it one of the most popular winter preserves. Eggplant caviar sterilized in an autoclave has several important advantages:

  • Less cooking time than with traditional pasteurization.
  • No unnecessary preservatives — a maximally homemade and natural taste in a jar.

The recipe uses a classic set of ingredients: eggplants, carrots, onions, tomatoes, chili pepper, garlic, and aromatic spices (khmeli-suneli, cumin). Together they create that same rich flavor familiar from childhood.

Eggplant caviar is versatile and goes well with almost everything: fresh bread or toast, potatoes, meat and fish dishes, lavash, croutons, brioche, pita, or crackers. It is also a great option for a healthy snack and a useful alternative to store-bought products.

The vegetables for the eggplant caviar are first stewed and slightly caramelized, which allows them to reveal their natural flavor and become tender. Then they are turned into a smooth, delicate paste with a pleasant texture. The combination of aromatic spices creates the perfect balance of heat, sweetness, and spice. And sterilization in the autoclave makes the taste harmonious, rich, and balanced, allowing the ingredients to “befriend” each other. This is exactly the kind of caviar you open “just to taste”, and a moment later you realize that half the jar is gone.

Eggplant caviar ingredients

  • Eggplant500 g
  • Tomato paste (or blended tomatoes)100 g
  • Onion100 g
  • Carrot75 g
  • Parsley root75 g
  • Fresh garlic20 g
  • Chili pepper
  • Khmeli-suneli5 g
  • Cumin5 g
  • Salt20 g
  • Apple cider vinegar40 g
  • Ground black pepper3 g
  • Sugar40 g

Step 1

Cut the eggplants and parsley root into medium-sized cubes. If the eggplants are not bitter, you can leave the skin on.

Add the chopped eggplants and parsley root to preheated oil in a pot or pan and stew.

Chop the carrots and onions and add them to the stewing vegetables.

Finely chop one-third of a chili pepper pod and two cloves of garlic. Add to the vegetables and continue stewing.

Add the tomato paste or blended tomatoes and mix well.

Add the spices: khmeli-suneli, salt, sugar, black pepper, and cumin. Stew until done.

Blend the hot vegetable mixture with a blender or run it through a meat grinder until smooth.

Check the taste. If necessary, add more salt, pepper, or other spices.

Portion the caviar into sterile jars and seal with lids.

Sterilize in the autoclave:
  • If the thermometer is located in the upper part of the chamber — 100 degrees for 15 minutes.
  • If the thermometer is located in the lower part of the chamber — 110 degrees for 15 minutes.
