How to Cook Beans with Meat in an Autoclave

RECIPE FOR CANNED BEANS WITH MEAT

Canned beans recipe will become your favorite, as the cooking method in an autoclave preserves all the beneficial properties and flavor characteristics of the ingredients. Beans with meat turn out incredibly tender and aromatic, creating a unique combination of homemade flavor.

The main secret of the beans with meat recipe lies in the correct method of heat treatment in the autoclave. Autoclaving ensures the maximum flavor potential of each ingredient and allows it to be stored for a long time.

Beans in an autoclave recipe for 5-6 jars with a volume of 0.5 liters.

INGREDIENTS for beans

  • Chicken thigh900g
  • Chicken fillet900g
  • Bay leaf5-6 leaves
  • Pepper mix (whole)5g
  • White beans200g
  • Salt/Pepper
  • Red onion150g
  • Bulb onion150g
  • Fresh thyme3-4 sprigs
  • Sunflower oil60 ml
  • Carrot150g

Step 1

Pre-soak the beans for at least 4 hours.

Clean the chicken thigh from skin and bones.

Peel the vegetables: carrots and onions. Cut vegetables into arbitrary cubes of 1 cm by 1 cm.

Fry the onion and carrot in sunflower oil until golden brown, immediately salt and pepper, and add a sprig of thyme.

Cut the fillet and thigh into arbitrary pieces.

Mix the meat with the fried vegetables, add salt and spice mix.

Place 1 bay leaf and whole pepper at the bottom of each jar.

In the jars, alternately layer meat with vegetables and beans, leaving 2 cm free from the top of the jar.

Pour 70-80 grams of water into each jar and close with lids. We recommend using twist-off lids, as for canning with these lids you do not need to pump initial pressure for cooking in an autoclave.

Cook the beans with meat in the autoclave at
  • If the thermometer is located at the top of the container - 110 degrees for 35 minutes.
  • If the thermometer is located at the bottom of the container - 120 degrees for 35 minutes.
