Recipe Caramelized Onion

Caramelized onion or onion confit is a dish with a unique combination of flavors and textures that can surprise even the most discerning gourmets. Preparing this delicacy in an autoclave ensures long-lasting and safe storage, allowing you to enjoy the dish year-round. Onion jam will become a sophisticated addition to many dishes, giving them new shades and depth.

Onion confit has a rich, caramelized flavor with sweet and tangy notes. Purple onion, less pungent than regular onion, creates a velvety flavor balance that contrasts with the intense sweetness of caramelized sugar and honey. Apple cider vinegar adds a piquant touch and harmoniously complements the dish's sweetness.

Onion Jam for Winter, for 4 jars of 0.5 liters each.

Ingredients

  • Purple onion1.5 kg
  • Sugar600 g
  • Honey400 g
  • Spices
  • Salt

Step 1

Slice 1.5 kg of onion into half rings.

Step 2

Sauté the onion in a frying pan with sunflower oil or olive oil. Start frying at a lower temperature, gradually increasing it, for about 10 minutes.

Step 3

When the onion is almost ready and has softened, add 500 grams of sugar and mix well so that the sugar combines with the onion juice and dissolves.

Step 4

When the sugar has completely dissolved, add 200 g of honey to the jam and stir until the honey is fully melted.

Step 5

Add 30 g of apple cider vinegar and salt to taste.

Step 6

Fill the jars, close the lids, and place them in the autoclave; cook the onion jam at 100 degrees for 8 minutes.

Step 7

Enjoy the delicate sweet and sour onion jam.
