RECIPE FOR CANNED BEANS WITH MEAT

The recipe for canned beans will become your favorite, as the method of preparation in the autoclave preserves all the beneficial properties and taste characteristics of the ingredients. Beans with meat turn out extremely tender and fragrant, creating a unique combination of the taste of a homemade dish.

The main secret of the bean and meat recipe lies in the correct thermal processing method in the autoclave. Autoclaving ensures maximum flavor potential for each ingredient and allows for long-term preservation.

Beans in the autoclave recipe for 5-6 jars with a capacity of 0.5 liters.

INGREDIENTS

  • Chicken thigh900g
  • Chicken fillet900g
  • Bay leaf5-6 leaves
  • Mixed peppercorns5g
  • White beans200g
  • Salt/Pepper
  • Red onion150g
  • Yellow onion150g
  • Fresh thyme3-4 sprigs
  • Sunflower oil60 ml
  • Carrot150g

Step 1

Soak the beans for at least 4 hours.

Step 2

Remove skin and bones from the chicken thigh.

Step 3

Peel the vegetables: carrot and onion. Cut the vegetables into arbitrary 1 cm cubes.

Step 4

Sauté the onion and carrot in sunflower oil until golden brown, season with salt and pepper, and add a sprig of thyme.

Step 5

Cut the fillet and thigh into arbitrary pieces.

Step 6

Mix the meat with the sautéed vegetables, season with salt, and add the spice mix.

Step 7

Place 1 bay leaf and some peppercorns at the bottom of the jars.

Step 8

Layer the meat with vegetables and the beans in the jars, leaving 2 cm free at the top of the jar.

Step 9

Add 70-80 grams of water and close the lids. We recommend using twist-off lids, as they do not require pressure to prepare in the autoclave.

Step 10

Cook the beans with the meat in the autoclave at 110 degrees for 35 minutes.

Step 11

Wait for cooking to finish and send the prepared preserves to cool and set completely in a cool place.
