Adjika, canned using this autoclave recipe, is a real flavor discovery for lovers of spicy, aromatic dishes and unique combinations. Tomatoes, apples, apricots, and bell peppers create a bright blend with a rich balance of sweetness and heat. Ingredients

  • Tomatoes 1.25kg
  • Apple250g
  • Carrot250g
  • Bell Pepper250g
  • Chili3 pcs
  • Apricots250g
  • Garlic75g
  • Sugar100g
  • Black and Allspice Pepper
  • Salt40g
  • Vinegar50g

Step 1

Dice 1.25kg of tomatoes into small cubes.

Step 2

Peel and dice 250g of assorted bell peppers into small cubes.

Step 3

Dice 3 chili peppers into small cubes.

Step 4

Add 250g of pitted apricots to the diced vegetables.

Step 5

Add 75g of peeled garlic.

Step 6

Dice 250g of peeled carrots and add to the vegetables.

Step 7

Peel and dice 250g of green apples into small cubes. Choose sour apples, like the Simirenko variety.

Step 8

Pass all the vegetables and fruits through a meat grinder.

Step 9

Add 100g of sugar and 40g of salt to the ground vegetables.

Step 10

Add 50g of vinegar, black pepper, and a bit of oil.

Step 11

Mix the adjika well in a bowl and distribute into prepared jars.

Step 12

Seal the jars with twist-off lids and place in an autoclave. Cook at 100°C for 15 minutes.

Step 13

Enjoy the prepared adjika.
