Eggplant Recipe for Winter

Eggplant for Winter— a snack that brings the pleasure of summer aromas and rich flavors even in the cold season. Prepared and preserved in an autoclave, the eggplants retain their tender, meaty texture and acquire a deep flavor from the combination of chili, garlic, onion, and aromatic spices. Honey adds a pleasant sweetness, while vinegar adds a slight tang, making this dish a true gastronomic delight. Especially delicious are roasted eggplants for winter with added spices: spicy chili provides heat, while coriander and cumin add warm, fragrant notes. Thanks to the diverse combination of ingredients, preserved eggplants have a rich flavor unmatched by anything else.

Preserving eggplants with garlic in an autoclave has its advantages - the eggplants become soft but retain a pleasant texture, without falling apart. Autoclave preservation ensures long storage, allowing you to enjoy the dish throughout the year.

Eggplant recipe for 5 jars, each 0.5 liters.

Ingredients

  • Eggplants1.5-2 kg
  • Chili2 pcs
  • Garlic70 grams
  • Onions2 pcs
  • Coriander20 grams
  • Salt
  • Honey100 grams
  • Cumin
  • Black and allspice pepper
  • Sunflower oil
  • Vinegar

Step 1

Cut the eggplants into 0.5 cm thick slices; thinner slices may fall apart during autoclaving.

Step 2

Fry the eggplants on both sides in oil until they are golden brown, or grill them in a pan. Transfer the fried eggplants into a large bowl.

Step 3

Chop the onions into small cubes and fry them in oil until they soften slightly.

Step 4

Add coriander and cumin to the onions, as spices release more aroma when heated.

Step 5

Chop the chili peppers and add them to the onions and spices.

Step 6

Add honey and stir everything well. Do not allow the mixture to caramelize; the honey should melt and heat up. Once the honey has melted, turn off the heat.

Step 7

Grate garlic into the hot mixture and add a few peppercorns of black and allspice pepper.

Step 8

Mix the eggplants with the hot mixture, add salt, and mix everything thoroughly.

Step 9

Pack the eggplants into jars, placing the remaining vegetable and spice mixture on top.

Step 10

Add a bit of sunflower oil and a few drops of vinegar to each jar, then seal them.

Step 11

Prepare the eggplants in the autoclave at 100 degrees for 15 minutes.

Step 12

Take the eggplants out of the autoclave and enjoy the tastiest appetizer that will impress all lovers of spicy flavors.
