Delicious stew with beans in an autoclave is prepared with the following ingredients (calculation for one 0.5-liter jar):

  • beans - 100 g;
  • meat (for example, pork) - 100 g;
  • salt - a pinch, about 5 g;
  • bay leaf - 0.5 pcs.;
  • black peppercorns - 5 pcs.;
  • fried carrots and onions - 1 tbsp. (optional).

Beans should be placed in a separate container and poured with boiling water, while cutting the meat and frying the carrots with onions. Beans should be placed in boiling water in a ratio of one to four. Thanks to this, they will absorb moisture faster and become softer. Then the beans can be boiled.  Next, put the fried vegetables, meat, black pepper, salt, and bay leaf into clean jars. Place the steamed beans on top. Then pour each jar with boiled water at room temperature, leaving about 2 cm from the top.

Cooking beans with meat in an autoclave is quite simple: the sealed jars should be placed in the autoclave and filled with water, covering them by about 1-2 cm. Then you can close the lid and start cooking. Next, start heating the autoclave. As soon as the temperature reaches 110 degrees Celsius, it should be maintained at this level for 40 minutes (if the thermometer is at the top of the autoclave), and 120 degrees Celsius - 40 minutes (if the thermometer is at the bottom of the construction). Then you can turn off the heating, cool the container to 30 degrees Celsius, and carefully release the air.

Recipe for beans with chicken in an autoclave


To cook beans with chicken in an autoclave, you will need the following ingredients (for 1 half-liter jar):

  • chicken - up to 350 g;
  • beans - 35-40 g;
  • salt - 1 tsp.;
  • pepper (you can use "Pepper mix") - to taste;
  • tomato paste - 20 g;
  • bay leaf - 0.5 pcs.

The chicken should first be stewed in a frying pan with oil until almost cooked - about 10 minutes. The broth formed during cooking can also be added to the jars. It is better to soak the beans overnight or at least for 4 hours.

Next, you can arrange the ingredients in jars: first pepper and bay leaf, then beans. Then add salt and put the chicken almost to the top of the jar (about 2 cm to the lid). Place tomato paste on top and pour the mixture with warm boiled water. Now you can seal the jars, place them in the autoclave, pour water and

  • If the thermometer is at the top of the container – cook for 30 minutes at 110 degrees.
  • If the thermometer is at the bottom of the container – cook for 30 minutes at 120 degrees.


Recipe for beans in tomato in an autoclave


Preparing this dish requires the following ingredients (calculation for several half-liter jars):

  • beans - 1 kg;
  • tomatoes - 3 kg;
  • salt - 3 tsp.;
  • sugar - 2 tsp.;
  • allspice - 10 pcs.;
  • fresh hot pepper - 0.5 pcs.;
  • bay leaf - 2-3 pcs.

Canned beans in tomato sauce in an autoclave are quite easy to cook, but you should consider a few nuances. First, you need to separate the good beans from the wrinkled or dried ones. Then rinse well, place in a large container, and fill with water. It can be cold or hot. Then rinse the beans and soak them in water for 4 hours. Next, put them in a pot, pour 4 liters of water, add one and a half teaspoons of salt and the same amount of sugar, and put on low heat, stirring occasionally.

Beans usually cook from 30 minutes to one and a half hours. To make sure they are ready, just mash one with a fork. If it is soft – no more cooking is needed. Do not let the beans turn into porridge.

After half an hour, strain the beans and start preparing the tomato puree. Scald the tomatoes with boiling water, carefully remove the skin, and press through a sieve. Pour the ready juice into a pot along with the beans, add allspice and finely chopped hot pepper, and simmer for 20 minutes over low heat (stirring is mandatory!). Add the bay leaf to the finished mixture.

Next comes the last stage: before cooking the beans in the autoclave, put the mixture into jars and preserve it. Wash and dry the jars. Place the beans in tomato tightly. Pour boiling water into each jar, leaving 2.5 cm free to the lid: beans will slightly increase during the process, they need space. Run a knife blade along the inner walls and wipe with a napkin to remove air bubbles (they can worsen the color and taste of the beans). Then you can seal the jars.

Now you can use the autoclave: pour water into it to cover the jars, heat to 110 °C, and leave for 20 minutes.

Recipe for beans with vegetables in an autoclave


Beans in an autoclave at home with the addition of vegetables are prepared with the following ingredients (for 1 half-liter jar):

  • beans - 100 g;
  • carrots - 100 g;
  • onions - 100 g;
  • bell pepper - 50 g;
  • vegetable oil - 50 g;
  • tomato juice - 350 g;
  • sugar - 0.5 tsp.;
  • salt - 1 tsp.;
  • vinegar - 1 tbsp.

Boil water and pour it over the beans. The water can be drained. The beans are cooked. Usually, beans are soaked for more than 10 hours. During this time, the water is changed every 3-4 hours. This is done so that all harmful substances come out of the beans. It is best to soak beans overnight. After swelling, the beans should be thrown into a pot with boiling water. Clean the vegetables, grate the carrots on a fine grater. Chop the onions, tomatoes, and peppers finely. Pour the cooked beans with tomato juice, then add the vegetables, sugar, and salt, and put on low heat for about 20 minutes. The guideline is that the pepper and onions should become soft. At the end, add vinegar and mix the ingredients.

Like all recipes for cooking beans in an autoclave, this one ends with the standard procedure of placing the ingredients in clean jars. Leaving about 2 cm of free space to the lid, seal the jars and place them in the autoclave filled with water. Cooking time -
