Beans should be placed in a separate container, covered with boiling water, while cutting the meat and frying the carrots and onions. Beans should be placed in boiling water in a ratio of one to four. This helps them absorb moisture more quickly and become softer. Then the beans can be cooked. Next, place the fried vegetables, meat, black pepper, salt, and bay leaf into clean jars. Top with the soaked beans. Then fill each jar with boiled water at room temperature, leaving about 2 cm from the top.
Beans with meat are quite simple to prepare in an autoclave: place the sealed jars in the autoclave and cover with water, about 1-2 cm above the jars. Then close the lid and start cooking. Recipe for Beans with Chicken in an Autoclave
To prepare beans with chicken in an autoclave, you will need:
- Beans - 100 g;
- Chicken meat - 100 g;
- Salt - a pinch, approximately 5 g;
- Bay leaf - 1 piece;

- Onion - 1 piece, chopped (optional).

- Fresh hot pepper - 0.5 pcs;
- Bay leaf - 2-3 pcs.
Canning beans in tomato sauce in an autoclave is quite easy, but there are a few nuances to consider. First, you need to separate the good beans from the wrinkled or dried ones. Then rinse them thoroughly, place them in a large container, and cover with water. You can use either cold or hot water. After that, rinse the beans and soak them in water for 4 hours. Next, place them in a pot, add 4 liters of water, 1.5 tsp of salt, and the same amount of sugar, and heat on low, stirring occasionally.
Beans usually cook for 30 minutes to an hour and a half. To check for readiness, simply mash one bean with a fork. If it's soft, no further cooking is needed. Avoid letting the beans turn into mush.
After half an hour, drain the beans and move on to preparing the tomato puree. Blanch the tomatoes in boiling water, carefully remove the skins, and pass them through a sieve. Pour the prepared juice into a pot with the beans, add allspice and finely chopped hot pepper, and simmer on low heat for 20 minutes (stirring is mandatory!). Run a knife blade along the inner edges and wipe with a napkin to remove air bubbles (as they can affect the color and taste of the beans). Then, you can seal the jars.
Now, you can use the autoclave: pour water into it to cover the jars, heat to 110°C, and keep it in this state for 20 minutes.
Recipe for Beans with Vegetables in an Autoclave
Beans in an autoclave at home with added vegetables are made with the following ingredients (for 1 half-liter jar):
- Beans - 100 g;
- Carrots - 100 g;
- Onion - 100 g;
- Bell pepper - 50 g;
- Vegetable oil - 50 g;
- Tomato juice - 350 g;
- Sugar - 0.5 tsp;
- Salt - 1 tsp;
- Vinegar - 1 tbsp.
Boil water and pour it over the beans. You can discard the water. The beans are cooked. Usually, beans are soaked for more than 10 hours, changing the water every 3-4 hours. This is done to remove all harmful substances from the beans. It's best to soak beans overnight. After soaking, put the swollen beans into a pot of boiling water. Peel and grate the carrots, chop the onions, tomatoes, and peppers. Pour the cooked beans with tomato juice, add the vegetables, sugar, and salt, and simmer on low heat for about 20 minutes. The peppers and onions should become soft. At the end, add the vinegar and mix the ingredients.
