Cherry Compote for Winter

Cherry compote, prepared according to our chef's recipe, is not only delicious but also very healthy. Cherries positively affect immunity, heart, and vascular function because they are rich in vitamins A, C, B, and antioxidants. Spices such as cinnamon, star anise, and anise improve digestion, calm the nervous system, and help fight stress. Rose tea gives a sophisticated aroma, and mint adds refreshing notes, making this compote the perfect base for hot and cold drinks.

The compote has a rich taste with a slight cherry tang. It is great as a standalone drink and reveals its potential in other beverages:

  • Cold mojito. Open a jar of compote, add a few ice cubes, fresh mint, a slice of lemon or lime – and enjoy a refreshing mojito that reminds you of hot summer even when it's snowy outside.
  • Non-alcoholic mulled wine. Heat the compote with additional spices: a cinnamon stick, star anise, and orange zest. This warm drink will warm you up on frosty evenings and fill your home with a cozy aroma.

Cherry Compote for 6 jars of 1 liter each.

Ingredients

  • Cherries1.5kg
  • Water4.5L
  • Sugar150g
  • Barberry5g
  • Cinnamon20g
  • Star Anise3 pcs
  • Anise5 pcs
  • Mint
  • Tea Rose

Step 1

Place 4.5 liters of water in a pot and bring it to a boil. Add 150g of sugar to the water.

Step 2

Add 1.5kg of cherries to the boiling water.

Step 3

Add the washed tea rose buds to the cherries.

Step 4

Add spices: 5g barberry, 5 sticks of cinnamon, 3 star anise, and 5 anise buds. Also, add mint leaves to the compote.

Step 5

Boil the compote thoroughly.

Step 6

Pour the cherry compote into 1-liter jars.

Step 7

Seal the jars with twist-off lids.

Step 8

Place the jars in the autoclave and cook the compote at 100°C for 8 minutes.

Step 9

Taste the cherry compote.
