Cooking chanterelles: step-by-step recipe

Chanterelle mushrooms are a true find for mushroom flavor enthusiasts. But how to preserve this incredible dish? A pickled mushroom recipe is an excellent way to keep them for the winter. They have a unique, delicate yet piquant taste that pairs wonderfully with other dishes. Thanks to preparation in an autoclave, chanterelles retain maximum nutrients and the unique forest aroma in a jar.

Chanterelles are not only delicious but also very nutritious. They are rich in B vitamins and vitamin D, which support immunity and the nervous system. Chanterelle mushrooms contain many beneficial trace elements, particularly potassium and magnesium, which positively impact the cardiovascular system. Thus, pickled chanterelles are an excellent choice for strengthening health in any season. 

Pickled chanterelles with onions and spices make a wonderful addition to meat dishes, potatoes, vegetables, or other sides. They are tasty with simple black bread, as a standalone snack. Preservation prepared in an autoclave has long storage without quality loss, making this mushroom recipe ideal for those who value their time and quality homemade preparations.

Recipe for 2 jars of 0.5 liters each.

What ingredients will you need?

  • Chanterelle Mushrooms1kg
  • Onion100g
  • Garlic2 cloves
  • Salt10g
  • Coriander20g
  • Salt
  • Allspice
  • Bay Leaf
  • Lemon Juice
  • Sunflower Oil

Step 1

Wash and thoroughly clean 1 kg of Chanterelle mushrooms. Add salt and lemon juice to a large pot of water. Wait for the water to boil.

Step 2

Slice 100g of onion into rings and add to the jars prepared for the mushrooms.

Step 3

Chop 2 cloves of garlic into small pieces and add to the onions at the bottom of the jars.

Step 4

Add bay leaf and allspice to the jars.

Step 5

Once the water boils, add the Chanterelle mushrooms and cook for 2-3 minutes.

Step 6

Drain the boiled Chanterelles using a sieve and let them dry to remove excess water.

Step 7

Place the Chanterelle mushrooms in the jars.

Step 8

Prepare a light marinade by adding 5g of salt to each jar.

Step 9

Add sunflower oil to the jars with mushrooms.

Step 10

Seal the jars with twist-off lids.

Step 11

Place the jars with mushrooms in the autoclave. Process at 110°C for 20 minutes.

Step 12

Enjoy tasting your prepared Chanterelle mushrooms.
