Pickled Radishes Recipe for Winter

Pickled radishes for winter in an autoclave — a way to preserve the fresh and crunchy texture of this vegetable for off-season consumption. Thanks to their juiciness and slight spiciness, radishes are perfect for pickling. When prepared in an autoclave, they retain their crunchiness and absorb the aromas of garlic, allspice, and green onions, while the marinade enhances the natural spiciness of the radishes.

This preserved radish is a great base for salads, adding interesting notes to any dish. This appetizer pairs well with meat or fish dishes, and radishes will add a pop of color to any table. Thanks to autoclave preservation, the radishes retain their beneficial properties and can be stored for a long time, making it the easiest way to enjoy spring produce all year round.

Radishes for Winter: 5 jars of 0.5 liters each.

Ingredients

  • Radishes2kg
  • Water300g
  • Sugar200g
  • Vinegar100g
  • Allspice
  • Salt
  • Garlic10 cloves
  • Green onions

Step 1

Wash the radish, trim the excess ends, cut large radishes into 2 or 4 parts, and leave the small ones whole.

Step 2

Prepare the marinade: in a pot, mix 300 grams of water, 200 grams of sugar, 100 grams of 9% vinegar, and salt. Bring to a boil until the sugar and salt dissolve.

Step 3

Crush the green onion with a knife blade and slice it. Use only the lower part of the onion.

Step 4

Fill the jars with radishes, adding onions, and 2 cloves of garlic to each jar.

Step 5

Add allspice and peppercorn mix to each jar.

Step 6

Pour the marinade into the jars, leaving 2-3 cm of free space from the top of the jar.

Step 7

Seal the jars and marinate in the autoclave at 100°C for 10 minutes.

Step 8

Enjoy a unique alternative to pickled cucumbers - radishes with a tangy twist.
