Wild Garlic Pesto Sauce - a delicious and healthy alternative to classic Pesto. Wild garlic, the first spring greenery, is known for its fresh, vibrant aroma and antioxidant properties. Combined with the creaminess of walnut and the spice of garlic, this sauce has a bright taste with a pleasant tang from lemon juice.

How to make pesto sauce for winter? Simply preserve it with an autoclave. Proper sterilization allows the sauce to retain its health benefits and rich flavor for a long time.

This wild garlic pesto recipe is perfect for salads, pasta, as a bread spread, or a complement to meat or fish dishes.

Winter pesto with wild garlic for four 0.5-liter jars.

Ingredients

  • Wild Garlic2 kg
  • Walnuts200 g
  • Garlic5 cloves
  • Sugar20 g
  • Salt30 g
  • Lemon2 pcs
  • Olive Oil250 ml
  • Sunflower Oil500 ml

Step 1

Wash and chop 2 kg of wild garlic for easier blending later.

Step 2

Transfer the wild garlic to a large bowl.

Step 3

Add 200 grams of walnuts, 5 cloves of garlic, 20 grams of sugar, and 30 grams of salt to the wild garlic.

Step 4

Pour in 250 ml of olive oil and 500 ml of sunflower oil.

Step 5

Squeeze the juice of two lemons and add it to the mixture.

Step 6

Blend everything until smooth.

Step 7

Pour the pesto sauce into jars.

Step 8

Seal the jars and place them in an autoclave. Process at 100 degrees Celsius for 10 minutes. Note that the sauce will have a lighter green color after autoclaving.

Step 9

Store the finished preserves in a cool, dark place, and enjoy your pesto with any dish when desired.
