Recipe for Stewed Meat in an Autoclave

Stewed meat in an autoclave is an excellent option for a quick and tasty lunch or dinner. This pork dish is also well-suited for outdoor activities or field conditions as it stores well and is not only tasty but also nutritious. Pork stewed meat prepared in an autoclave is the best option for long-term meat storage. Stewed meat in an autoclave is completely safe as botulism spores can only be destroyed by autoclaving. This method of preparation preserves the flavor and nutritional qualities of the meat for an extended period, making it ideal for those looking for an effective way to preserve pork.

Recipe for stewed meat for 4 jars of 0.5 liters each.

Ingredients

  • Pork (neck)2kg
  • Salt40g
  • Black peppercorns12pcs
  • Bay leaves4pcs

Step 1

Cut the meat into arbitrary pieces, removing cartilage, veins, and bones.

Step 2

Salt the cut meat at a ratio of 2% salt per 1 kg of pork.

Step 3

Place 3 black peppercorns into each jar.

Step 4

Place 1 bay leaf into each jar.

Step 5

Pack the meat into the jars, pressing it down tightly, leaving 2-3 cm of space to the lid.

Step 6

Load the jars into the autoclave.

Step 7

Pour water to cover the lids by 2 cm.

Step 8

Start the sterilization process for 40 minutes at 110 degrees Celsius.

Step 9

Remove your finished stewed meat and enjoy with a delicious side dish.
