Stew Recipe in Autoclave

Stew in an autoclave - an excellent option for a quick and tasty lunch or dinner. Homemade stew in an autoclave is perfect both for weekdays, when cooking time is limited, and for special occasions when you want to treat yourself and your loved ones to something delicious. This pork dish is also great for outdoor trips or field conditions, as it keeps well, and is not only tasty but also nutritious. Whatever the circumstances, it will always be a great choice!

Pork stew prepared in an autoclave is the best option for long-term meat storage. Stew in an autoclave is completely safe, as spores of the botulism pathogen can only be destroyed by autoclaving.  This cooking method preserves the taste and beneficial properties of the meat for a long time, making it ideal for those looking for an effective way to preserve pork.

Stew recipe for 4 jars of 0.5 liters.

Ingredients for Meat Preservation

  • Pork (neck)2kg
  • Salt40g
  • Black peppercorns12 pcs
  • Bay leaf4 pcs

Step 1

Cut the meat into arbitrary pieces, removing cartilage, veins, and bones.

Salt the cut meat at a ratio of 2% salt per 1 kg of pork.

Place 3 pcs. of black peppercorns into each jar.

Place 1 bay leaf into each jar.

Pack the meat into jars, pressing it tightly, leaving 2-3 cm of free space to the lid.

Load the jars into the autoclave.

Pour water to cover the lids by 2 cm.

Start the sterilization process:
  • If the thermometer is at the top of the container – 40 min at 110 degrees.
  • If the thermometer is at the bottom of the container – 40 min at 120 degrees.
