Borscht Dressing Recipe

Borscht Dressing – a revelation for every home cook. It makes the preparation of traditional Ukrainian borscht quick and easy while retaining the authentic taste of the dish. The borscht dressing has a rich, intense flavor, combining the sweetness of beets, the tartness of tomatoes, the spiciness of garlic, and onions.  Thanks to carefully selected ingredients, this dressing becomes an ideal base for borscht. It's best used as a base for dishes combined with fresh herbs to add a subtle aroma of freshness.

The borscht dressing in an autoclave has one major advantage – long-lasting and safe storage. Due to autoclaving, the preserve can be stored for over a year, retaining all its taste and nutritional qualities. Autoclaving ensures sterility and airtightness, preventing spoilage of the product. This means you can enjoy flavorful, hearty borscht in the cold winter months without spending much time on preparation.

A solution for people who don't have much time for cooking, have busy schedules, yet want to serve their family delicious homemade meals – this is the Borscht Dressing Canning. By adding a few spoonfuls of the dressing to boiling water with meat and vegetables, you get ready-made borscht with minimal effort. 

Borscht Dressing for 5 jars of 0.5-liter volume.

Ingredients

  • Carrot300g
  • Onion300g
  • Beet1 kg
  • Tomato Paste70g
  • Sugar20g
  • Salt / Pepper
  • Garlic4-5 cloves
  • Bay Leaf5 pcs
  • Vinegar
  • Sunflower Oil60 ml

Step 1

For marinating the beet, grate it on a coarse grater.

Step 2

Add sunflower oil, salt, pepper, vinegar, and sugar to the grated beet. Mix everything and leave it to marinate.

Step 3

Dice the onion finely and fry it in oil.

Step 4

Grate the carrot on a fine grater and add it to the onion, frying together until al dente (not fully cooked).

Step 5

Add the marinated beet to the carrot and onion and simmer for another 5 minutes.

Step 6

Grate the garlic and add it to the other vegetables immediately.

Step 7

Add the tomato paste and mix.

Step 8

At the bottom of each jar, add 1 bay leaf, 2 allspice berries, and 3 black peppercorns.

Step 9

Distribute the borscht dressing among the jars and seal them with lids.

Step 10

Preserve in an autoclave at 100 degrees Celsius for 7 minutes.

Step 11

Delicious borscht dressing is ready! Now you can store it in a cool place until you prepare borscht.
