Borscht Dressing Recipe

Borscht dressing – a discovery for every housewife. With it, preparing traditional Ukrainian borscht is quick and simple, while preserving the authentic taste of the dish. The dressing has a rich, full flavor, combining the sweetness of beets, the sourness of tomatoes, and the piquancy of garlic and onions.  Thanks to carefully selected ingredients, the dressing becomes the perfect base for borscht. It is best used as a base for the dish in combination with fresh herbs to add a subtle aroma of freshness. The dressing is also suitable for other dishes. Winter borscht seasoning pairs well with meat and vegetable dishes, giving them a special note characteristic of true Ukrainian cuisine.

Borscht dressing in an autoclave has one major advantage – long and safe storage. Thanks to autoclaving, the preserves can be stored for over a year while retaining all their taste and nutritional properties. Autoclaving ensures sterility and airtightness, preventing spoilage. This means that in the cold winter months you will be able to enjoy aromatic and hearty borscht without spending much time on preparation.

A solution for people who don’t have much time to cook, have a busy schedule, but want to feed their loved ones delicious homemade lunches –  is preserved borscht dressing. By adding a few spoonfuls of the dressing to boiling water with meat and vegetables, you get ready borscht with minimal effort. 

Dressing for 5 jars of 0.5 liters.

Ingredients for Borscht Dressing

  • Carrot300g
  • Onion300g
  • Beetroot1 pc
  • Tomato paste70g
  • Sugar20g
  • Salt / Pepper
  • Garlic4-5 cloves
  • Bay leaf5 pcs
  • Vinegar
  • Sunflower oil60 ml

Step 1

For marinating the beetroot, grate the beet on a large grater.

Add sunflower oil, salt, pepper, vinegar, and sugar to the grated beetroot. Mix everything and leave to marinate.

Cut the onion into small cubes and fry the onion in oil.

Grate the carrot on a fine grater and add it to the onion, fry together until al dente (not fully cooked).

Add the marinated beetroot to the carrot and onion and stew for another 5 minutes.

Grate the garlic and immediately add it to the other vegetables.

Add tomato paste and stir.

At the bottom of the jars, add 1 bay leaf, 2 pcs. allspice, and 3 pcs. black peppercorns.

Distribute the borscht dressing into the jars and close them with lids.

Step 10

Preserve in the autoclave at the following temperature:
  • If the thermometer is at the top of the container – 100 degrees, 7 min.
  • If the thermometer is at the bottom of the container – 110 degrees, 7 min.

Delicious borscht dressing is ready! Now you can store it in a cool place until cooking borscht.
