Chicken broth is a classic culinary staple. It serves as a base for soups, sauces, stews, and is also enjoyed on its own for colds and immune support. However, not all broths have the same rich taste and aroma. So how do you make this dish truly special?

We are sharing a recipe that explains what an ideal rich broth should be, why rooster broth is considered the best, and how using an autoclave helps achieve a concentrated broth with minimal effort.

Chicken broth can vary: light and clear, thick and rich, or even gelatinous due to the high content of bones. However, a high-quality meat broth has these characteristics: richness, deep taste and aroma, clarity. A good bone broth has a pleasant golden color without excess sediment. A jelly-like consistency after cooling indicates that the concentrated broth contains sufficient collagen and beneficial nutrients from the meat and bones.

Opening a jar of chicken broth gives you a versatile ingredient for various dishes: light soups, meat-based sauces, risotto, porridge, and stews with vegetables. If you are looking for the perfect broth recipe, you should try rooster broth in an autoclave. It is a great find for those who want a delicious chicken broth without spending too much time cooking. Rooster broth is considered the tastiest because rooster meat has more natural fat and a richer flavor. Adding carrots, onions, garlic, allspice, and bay leaves enhances the dish’s aroma.

Ingredients for Rooster Broth

  • Rooster1.3 kg
  • Onion200 g
  • Carrot200 g
  • Root vegetables — parsnip and parsley root
  • Water4500 ml
  • Salt
  • Bay leaves
  • Garlic30 g
  • Allspice

Step 1

Cut 200 g of onion, 200 g of carrot, 30 g of garlic, and root vegetables — parsnip and parsley root — into large pieces and fry in a well-heated pan.

Step 2

Add spices to the vegetables: 14 allspice berries, 7 bay leaves, and salt.

Step 3

Cut 1300 g — half of the homemade rooster — into small pieces so they can fit into 0.5 l jars.

Step 4

Set aside the fried vegetables, and fry the rooster in the same pan.

Step 5

Cut one carrot into thin rings for a beautiful look in the jars.

Step 6

Add the fried vegetables to the meat and pour water (450 ml). Cover and bring to a boil.

Step 7

Add the sliced carrot rings to the pre-prepared 0.5 l jars (7 jars).

Step 8

Place the meat from the broth into the jars with the carrots, without the vegetables.

Step 9

Pour the broth into the jars, after removing the vegetables from it.

Step 10

Close the jars with twist-off lids.

Step 11

Send the jars to the autoclave. Cook at 110 degrees for 40 minutes.

Step 12

Taste the chicken broth.
