Chili con carne — how to cook in an autoclave

Chili con carne is more than just a dish — it’s a culinary journey to the heart of Mexico. The name literally translates from Spanish as “chili with meat,” and although every region of the world puts its own twist on this recipe, the key ingredients always remain: juicy meat, beans, and aromatic spices. We’ve adapted this classic recipe for preparation in the UTEHO autoclave to preserve the maximum flavor and aroma, while also making a convenient winter-ready preserve in glass jars.

Stewed beans with meat, corn, carrots, onions, and tomato paste create a rich and balanced composition. White and dark beans in the autoclave keep their shape but become tender to the bite, while the hearty meat base of beef and pork adds balance to the dish. The canned beans with meat have a light tomato aftertaste and a delicious roasted vegetable aroma that awakens the appetite as soon as you open the jar.

Chili con carne pairs perfectly with rice, mashed potatoes, or simply a slice of bread. It’s ideal as a full lunch or dinner. You can also use it as a filling for burritos or tacos, or serve it with shredded cheese and fresh vegetables for an authentic Mexican-style meal.

Preserved beans recipe is designed for 4 jars of 0.5 L each.

Ingredients

  • Carrots200 grams
  • Onions200 grams
  • Sunflower oil100 grams
  • Salt/pepper
  • Tomato paste150 g
  • Beef mince200 g
  • Pork mince200 g
  • Canned corn100 grams
  • White beans100 grams
  • Dark beans100 grams
  • Garlic2–3 cloves
  • Chili1/2 pc

Step 1

Dice 200 g of onion and add to a preheated pan with 100 g of sunflower oil. Sauté.

Step 2

Grate 200 g of carrots and add to the onions for further sautéing.

Step 3

Finely chop 2–3 garlic cloves and add to the vegetables.

Step 4

Finely chop half a chili pepper, add it to the pan, and sauté the vegetables until golden.

Step 5

Add 400 g of minced meat (beef + pork) to the vegetables and sauté.

Step 6

Add 150 g of tomato paste to the sautéed mince.

Step 7

Add 1–1.5 tsp of sugar to taste.

Step 8

Add 100 g of canned corn and mix well.

Step 9

Add a little water and continue to sauté.

Step 10

Add spices: whole coriander, oregano, whole cumin.

Step 11

Add 100 g of white beans and 100 g of dark beans to the meat and vegetables, mix well.

Step 12

Transfer the dish into four pre-sterilized 0.5 L jars and seal with twist-off lids.

Step 13

Place the jars in the autoclave. Cook at 110°C for 40 minutes.
