And after a good catch, of course, the question arises of how to prepare this fish. We recommend canning it so you can enjoy your favorite dish in winter. But the greatest advantage of cooking in an autoclave is safety—autoclaving occurs at temperatures above 100 degrees, which means that the finished product will be stored for a long time without harmful bacteria. For this recipe, we will need a minimal number of ingredients:


  • fish—2 kg;
  • onion—2 pcs.;
  • carrots—4 pcs.;
  • tomato paste—100 g;
  • tomato juice—0.5 l;
  • sunflower oil—for frying;
  • bay leaf;
  • black pepper;
  • allspice.

Preparation method:


  1. The fish needs to be cleaned. If you are canning small fish, you can use it whole, cleaned.
  2. The cleaned fish should be thoroughly washed several times and placed in a large container. Then salt the fish and leave it for a few hours.
  3. The next step will be frying the fish in a pan. This step is necessary to remove excess moisture from the fish and maintain its shape during canning.
  4. Peel the onion and carrots. Slice the onion into rings and grate the carrots on a coarse grater. Then fry these ingredients in a large amount of oil. After 2 minutes, add the tomato juice and tomato paste to the pan and continue to simmer for another 10-15 minutes.
  5. In prepared jars (we recommend using 0.5 l jars), place a bay leaf, then pieces of fried fish, followed by vegetables and spices, leaving 2-3 cm of free space.

Our preserves are ready for autoclaving. Close the jars with lids and place them in the autoclave. According to this recipe, the preserves should be cooked for 30 minutes at a temperature of 105 degrees.

The dish prepared using this recipe is very hearty and will taste great for lunch or dinner. For preparation, we need:


  • fish (we recommend pike or gobies) - 2 kg;
  • beans - 1 cup;
  • onion - 2 pcs.;
  • tomato paste - 100 g;
  • sunflower oil - 0.5 cup;
  • salt - 45 g.

Preparation:


  1. The preliminary stage - preparing the beans. A day before preparing the preserves, beans need to be soaked in cold water for 12 or more hours. After that, rinse the beans thoroughly.
  2. Proceed to preparing the fish. Remove the intestines, cut off the head and fins. Cut the body into medium pieces. It is advisable to remove as many bones as possible during cleaning and cutting.
  3. Peel and dice the onion into large cubes. Fry it in a pan until cooked. Add the tomato paste and continue frying for another 3 minutes.
  4. Start filling the jars - place a small amount of tomato sauce at the bottom. Then layer the fish and beans. After filling the jar to ¾ full, add tomato sauce, leaving 2 centimeters of empty space.

Preserving in the autoclave takes 30 minutes at 105 degrees.

For preparation, we need:


  • mackerel - 3 pcs.;
  • tomato - 1 pc.;
  • tomato paste - 2 tbsp.;
  • onion - 1 pc.;
  • sunflower oil - 2 tbsp.;
  • water - 1 cup;
  • sugar, salt, pepper - to taste.

Preparation:


  1. Thoroughly clean and wash the fish. Remove the intestines and cut off the head, tail, and fins. Cut the resulting body into large pieces.
  2. Peel the onion and slice it into half rings, and dice the tomato.
  3. Fry the vegetables in oil in a pan for 10 minutes.
  4. Transfer the mixture obtained in the previous step to a pot, place on the heat. Add tomato paste, salt, sugar, pepper, and water. Stirring, bring to a boil, turn off, and let cool.

Everything is ready for canning. Place the diced mackerel in prepared jars, pour over the sauce, and seal. Place in the autoclave and can for 30 minutes at 105 degrees.
