And after a good catch, of course, the question arises, how to cook this fish. And we recommend you preserve it to enjoy your favorite dish in winter. Homemade canned fish has many advantages over factory-made — quality, confidence in the naturalness and freshness of the raw material, and more recipe variety.

And cooking fish preserves is easier and faster in an autoclave. But the biggest advantage of cooking in an autoclave is safety — autoclaving takes place at a temperature above 100 degrees, which means the finished product will be stored for a long time without harmful bacteria. For this recipe we will need a minimum of ingredients:


  • fish — 2 kg;
  • onion — 2 pcs.;
  • carrot — 4 pcs.;
  • tomato paste — 100 g;
  • tomato juice — 0.5 l;
  • sunflower oil — for frying;
  • bay leaf;
  • black pepper;
  • allspice.

Cooking method:


  1. The fish needs to be cleaned. In case you are canning small fish, it can be used whole, cleaned but not cut into pieces.
  2. The cleaned fish should be thoroughly washed several times and placed in a large container. Then salt the fish and leave it for a few hours.
  3. The next step will be frying the fish in a pan. This stage is necessary to remove excess moisture from the fish and preserve its shape during canning.
  4. Peel the onion and carrot. Cut the onion into rings and grate the carrot on a coarse grater. Then fry these ingredients in a large amount of oil. After 2 minutes, add tomato juice and tomato paste to the pan and continue simmering for another 10–15 minutes.
  5. In prepared jars (we recommend using 0.5 l jars), place a bay leaf, then pieces of fried fish, and then vegetables and spices so that 2–3 cm of free space remains.

Our preserves are ready for autoclaving. Close the jars with lids and place them in the autoclave.

  • If the thermometer is in the upper part of the container – cook for 30 minutes at 105 degrees.
  • If the thermometer is in the lower part of the container – cook for 30 minutes at 115 degrees.

Fish with beans in an autoclave

The dish prepared according to this recipe is very hearty and will taste great for lunch or dinner. For cooking we need:


  • fish (we recommend pike or gobies) — 2 kg;
  • beans — 1 cup;
  • onion — 2 pcs.;
  • tomato paste — 100 g;
  • sunflower oil — 0.5 cup;
  • salt — 45 g.

Preparation:


  1. Preliminary stage — preparing the beans. The day before cooking, soak the beans in cold water for 12 or more hours. Afterwards, rinse the beans thoroughly.
  2. Proceed to prepare the fish. Remove the entrails, cut off the head and fins. Cut the carcass into medium pieces. It is advisable during cleaning and cutting to remove the maximum number of bones.
  3. Peel the onion and cut into large cubes. Fry in a pan until done. Add the tomato paste and continue to fry for another 3 minutes.
  4. Start filling the jars — place a small amount of tomato dressing at the bottom. Then, in layers, the fish and beans. After filling the jar ¾ full, pour in the tomato dressing so that 2 cm of empty space remains.

  • If the thermometer is in the upper part of the container – cook for 30 minutes at 105 degrees.
  • If the thermometer is in the lower part of the container – cook for 30 minutes at 115 degrees.

For cooking we need:


  • mackerel — 3 pcs.;
  • tomato — 1 pc.;
  • tomato paste — 2 tbsp.;
  • onion — 1 pc.;
  • sunflower oil — 2 tbsp.;
  • water — 1 cup;
  • sugar, salt, pepper — to taste.

Preparation:


  1. Clean and wash the fish thoroughly. Remove the entrails and cut off the head, tail, and fins. Cut the resulting carcass into large pieces.
  2. Peel the onion and cut into half rings, and the tomato — into cubes.
  3. Fry the vegetables in oil in a pan for 10 minutes.
  4. Transfer the mixture obtained in the previous step into a pot, put on the fire. Add tomato paste, salt, sugar, pepper, and water. Stirring, bring to a boil, turn off and let cool.

  • If the thermometer is in the upper part of the container – cook for 30 minutes at 105 degrees.
  • If the thermometer is in the lower part of the container – cook for 30 minutes at 115 degrees.
