Zucchini caviar for winter – a simple recipe — is a classic appetizer that has won the hearts of many gourmets. The dish has a rich flavor and is versatile, suitable for any side dishes and meals, making it an excellent choice for winter preservation. Thanks to the combination of zucchini, tomatoes, carrots, and onions, the dish gains a harmonious texture and aroma.

Zucchini caviar, prepared according to our chef's recipe, blended to a creamy consistency and preserved in an autoclave, is incredibly tender and light. The combination of seasonal vegetables and spices creates a natural, balanced flavor. Garlic, pepper, and coriander add spicy notes, while tomato paste and lemon juice give the dish a pleasant tang.

Zucchini caviar for winter – 4 jars of 0.5 liters each.

Ingredients

  • Zucchini2 kg
  • Carrots2 pcs
  • Tomatoes2 pcs
  • Tomato paste40 g
  • Onions2 pcs
  • Salt / Pepper
  • Coriander100 ml
  • Sunflower oil
  • Lemon juice

Step 1

Cut the carrots and onions into random pieces.

Step 2

Fry the carrots and onions in oil in a preheated pot.

Step 3

Crush the garlic with the blade of a knife and add it to the vegetables to fry.

Step 4

Cut the zucchini. If the zucchini has tough skin, it's better to peel it.

Step 5

Fry them along with the other vegetables in the pan for 15-20 minutes until softened.

Step 6

Add the chopped tomatoes, salt, pepper, ground coriander, 40 grams of tomato paste, a bit of sugar, water, mix well, and cook for a few more minutes.

Step 7

Blend with a blender until smooth.

Step 8

Fill and seal the jars.

Step 9

Cook the zucchini spread in the autoclave at 100°C for 15 minutes.

Step 10

Enjoy the tender zucchini spread with bruschetta and toast.
