Mushrooms with Beans Recipe for Winter

Have you ever tried morel mushrooms? These unusually shaped mushrooms, also known as shushyrypky, are considered a delicacy in many countries. They have a pleasant nutty aroma and pair well with vegetables. In this recipe, we will cook flavorful morels with tender white beans and champignons — a mushroom dish that is unusual but very tasty for home canning.

This is not just canned mushrooms, but a complete dish with a unique flavor, which will be a treasure for vegetarians, mushroom pickers, or anyone looking for new mushroom recipes for winter.

The dish is delicious as a side to meat or fish, with toast or croutons, as a filling for pies or tartlets, or as a ready-to-eat snack “from the jar” at the cottage or on a hike.

The cooking temperature depends on the design of the autoclave. If you are cooking in a Uteho autoclave and the thermometer fitting is in the upper part — cook mushrooms with beans at 110°C for 40 minutes. If it’s in the lower part of the autoclave — at 120°C for the same time.

Morel mushroom recipe for 4 jars of 0.5 L.

Ingredients for Mushroom Preservation

  • Carrot 100 g
  • Onion 100 g
  • White beans 150 g
  • Morel mushrooms150 g
  • Champignons 200 g
  • Bay leaf (stem)5 pcs
  • Salt 50 g
  • Allspice5 pcs per jar
  • Black peppercorns6 pcs per jar
  • Bay leaf 2 pcs per jar
  • Sunflower oil 40 g per jar
  • Water

Step 1

Cut the carrots into pieces and immediately distribute them into the jars.

Cut the champignons into pieces and also distribute them into the jars.

Cut the morel mushrooms into smaller pieces. You can put only the upper part or the whole mushroom into the jar as you wish.

Dice the onion and add it to the jar as well.

Add the beans. You may pre-soak the beans in cold water.

Again, layer the morels and beans.

Add spices: salt, black peppercorns, allspice, and bay leaf.

Add a little oil — about 10–15 grams per jar.

Pour in water to fill about 40% of the jar and close with lids.

Cook the mushrooms with beans in the autoclave at 120°C for 40 minutes. If the thermometer port is in the upper part of the autoclave — 110°C for 40 minutes.
