How to cook Bolognese sauce for winter in an autoclave:

Bolognese Sauce Recipe

Meat Bolognese sauce - a classic Italian sauce often used for making pasta such as spaghetti or lasagna. But when unexpected guests arrive, there is not always time for long cooking, and the incredible homemade Bolognese sauce prepared in advance in an autoclave comes to the rescue in such situations. So cook with us, and then open a jar of aromatic and delicious sauce for spaghetti whenever you wish.

The main secret of the sauce lies in its heat treatment in the autoclave. Autoclaving preserves excellent taste qualities, neutralizes all bacteria, and allows products to be stored for a long time. 

Meat BOLOGNESE sauce for winter for 4 jars of 0.5 liters.

Ingredients for the sauce

  • Shallot onion200g
  • Carrot100g
  • Celery stalk150g
  • Tomato paste100g
  • Sugar20g
  • Salt / Pepper
  • Red wine100ml
  • Beef mince1kg
  • Fresh thyme1 bunch
  • Sunflower oil60 ml

Step 1

Cut the vegetables (carrot, celery, and onion) into small cubes.

Fry the vegetables in oil.

Fry the meat until cooked and add salt, pepper, a few bay leaves, and thyme.

Add tomato paste to the meat and pour in red wine.

Continue stewing the meat until the alcohol from the wine evaporates, 4–5 min.

Mix the cooked vegetables and meat.

Put into jars leaving 2 cm to the lid edge. Close the lids.

Sterilize in the autoclave at the temperature:
  • If the thermometer is located at the top of the container - 110 degrees for 30 min.
  • If the thermometer is located at the bottom of the container - 120 degrees for 30 min.
Place in the autoclave
