Homemade Roast Pork

Roast pork is a dish that is easy to prepare at home using simple ingredients and spices. This recipe lets you create delicious meat with a golden crust and juicy texture inside — perfect for a festive table or an ordinary dinner.

Homemade roast pork is not only tasty but also safe, because by controlling the ingredients you can be sure there are no preservatives or chemical additives.

Which roast pork recipe to choose? There are many options, but we offer a unique method — preserving roast pork in jars with a slightly sweet honey-mustard sauce. The dish keeps its freshness, juiciness and nutrients for months.

How to make roast pork at home? Pork loin is best: it balances meat and fat, making the dish tender and juicy. Honey-mustard sauce adds a pleasant sweet-spicy note. You need just a few ingredients: pork loin, honey, mustard, oil, onion, allspice, bay leaf and, of course, a household autoclave. Cooking in the autoclave doesn’t take long but yields an unusual meat preserve that suits daily meals and special occasions alike.

Recipe yields 4 half-liter jars.

Ingredients for roast pork in the autoclave

  • Pork loin1.3 kg
  • Onion150 g
  • Honey50 g
  • Strong mustard50 g
  • Sunflower oil50
  • Chili1/2 pc
  • Allspice
  • Salt/pepper
  • Bay leaf

Step 1

Cut 1.3 kg of pork loin into pieces that fit a 0.5 L jar. Remember: do not wash the meat before cooking.

Step 2

Season the pork pieces with salt and pepper on all sides.

Step 3

For the sauce, mix 50 g of strong mustard with 50 g of honey.

Step 4

Cut 150 g of onion into large pieces and add to the meat, along with coriander and black pepper.

Step 5

Chop 2–3 heads of garlic into small cubes and add to the meat.

Step 6

Add 50 g of sunflower oil, mix well and marinate. Let the meat rest 1–2 hours in the fridge.

Step 7

Sear the marinated meat in a pan until golden brown.

Step 8

In prepared 0.5 L jars, place a bay leaf and 8 peppercorns.

Step 9

Pack the seared meat pieces into the jars.

Step 10

Add half of the sliced fresh chili pepper to the meat in the jars.

Step 11

Seal the jars with twist-off lids and place them in the autoclave. Cook the roast pork:
  • If the thermometer is at the top of the vessel — 110 °C for 40 min.
  • If the thermometer is at the bottom of the vessel — 120 °C for 40 min.
