Pork ribs with plums and BBQ sauce in an autoclave — a combination of tender meat, sweet fruity notes of plums, and a light smoky aroma of BBQ sauce. Such canned meat made in an autoclave is not only convenient — having a ready-made dish at hand — but also a true culinary masterpiece that will enrich your home collection of meat preserves.

Pork ribs, cooked in their own juice with ketchup and spices, absorb all the flavors of the ingredients. Black pepper, salt, carrots, and onions make the dish especially nutritious. Homemade canned pork has a rich, full flavor, and the tender meat texture, perfectly separating from the bone, harmonizes with caramelized plums, creating an incredible balance of sweet, salty, and slightly spicy notes.

This recipe makes 4 jars of 0.5 liters each.

Ingredients

  • Pork ribs1.1 kg
  • Plums400 grams
  • Black pepper (freshly ground)30 grams
  • Onion150 grams
  • Ketchup80 grams
  • Salt
  • Carrot100 grams
  • Water70 grams
  • Sunflower oil

Step 1

Mix 30 g of freshly ground black pepper and 30 g of salt in a bowl.

Step 2

Cut 1.1 kg of pork ribs into even pieces and coat them on both sides with the spices.

Step 3

Slice 150 g of onion into small rings.

Step 4

Fry the ribs in sunflower oil on both sides.

Step 5

Grate 100 g of carrots.

Step 6

Wash 400 g of plums and remove the pits.

Step 7

Place the fried ribs on a plate, and in the same pan where the ribs were cooked, add chopped onion, carrots, plums, and a bit of oil.

Step 8

Place the ribs into pre-prepared half-liter jars.

Step 9

Add 80 g of ketchup and 70 g of water to the pan with the sautéed vegetables to make the BBQ sauce.

Step 10

Add the sautéed plums and vegetables with the sauce into the jars with the ribs. Close the jars with twist-off lids.

Step 11

Place into the autoclave. Cooking time for the pork stew in the autoclave is 40 minutes at 110°C.
