How to Cook with Steam. Steam Autoclave

We receive many questions about "how to cook with steam?". In this article, we will discuss how the steam valve works and how to use it.  Home canning is a popular method for preserving vegetables, fruits, and meat, and creating delicious supplies for the winter. Traditional canning methods have their drawbacks and risks, such as the danger of burns, the need for constant monitoring, and the risk of ineffective preservation. With the advancement of technology, new methods of long-term food preservation, such as using an autoclave, make the canning process effective, quick, and safe. The steam cooking method in an autoclave is one of the most innovative methods.

What is a Steam Autoclave?

A steam autoclave is a device that uses steam for preservation. To enable your autoclave to operate in steam mode, it must be equipped with a special steam valve. The valve is developed by Uteho and is available for purchase on our website.

How Does the Steam Valve Work?

The steam valve screws onto the ball valve in place of the nipple and is suitable for all autoclave models that come with a standard ball valve. The valve operates automatically and requires no additional monitoring. The ball valve to which the steam valve is attached should always remain open; it should not be closed. Note! You will need a 24mm wrench to fit or remove the nipple from the ball valve and a 27mm wrench to secure the steam valve!

Preparing the Autoclave for Steam Mode

When preparing the autoclave for steam mode, note that the amount of water needed for the steam mode is significantly less than for the standard autoclave mode. Simply fill the autoclave with water up to 8-10 cm from the bottom.

Temperature Settings and Cooking Time

The temperature settings for the steam cooking method also differ. The temperature is 10 degrees higher, and the holding time is twice as long compared to the standard autoclaving method. This is due to the rapid reaching of working temperature and quick cooling. A table with temperature settings can be found in the steam valve's manual.

Heating Process and Operation of the Steam Valve

During the water heating in the autoclave, the steam valve remains open, releasing excess air. Once all the heated air is expelled, the valve automatically closes, leaving only heated steam in the autoclave. This occurs at a temperature of approximately 90-95 degrees. The pressure in the autoclave then starts to rise, and at a temperature of 120 degrees, it exceeds 1 atm.

What Lids are Suitable for Steam Mode?

For steam preservation, twist-off lids are the best choice.  Retort pouches and screw-on lids  are not suitable for this preservation mode.
