Turkey in Autoclave: Recipe

Among domestic animals, turkey meat is especially valued. Its dietary properties are well-known, including its relatively low cholesterol content. As a result, it is easily absorbed by the human body. Turkey contains a large amount of vitamins (A and E) and trace elements (potassium, iron, calcium, sodium, etc.). Compared to other types of meat from domestic animals and poultry, turkey contains more iron and less fat.

Turkey is recommended as one of the first meats to introduce during weaning for children. Due to its folic acid content, it is also recommended for pregnant and breastfeeding women. Other cases when turkey meat is beneficial include insomnia, depression, susceptibility to stress, and heavy physical exertion.

One way to prepare turkey is by canning, and doing so in an autoclave is also a reliable method to eliminate unwanted bacteria.

For good preservation, in addition to using an autoclave, it is essential to select high-quality raw materials ─ in this case, turkey meat. There are several ways to check its freshness and quality:

  • The skin should be intact, without any stains or bruises, and of a light color;
  • As with any poultry meat, the aroma should be mild and barely noticeable;
  • Turkey meat is usually dry, so pressing it should not release liquid and it should return to its shape.

It is best to use fresh chilled meat for canning; however, if only frozen raw material is available, it is not a major issue. It is important that the turkey is thawed only once, and proper thawing techniques should be used.

Turkey Drumstick in Autoclave

This is one of the simplest turkey recipes, yet it has an incredibly tender taste. For this recipe, you will need turkey drumsticks and seasonings (for a half-liter jar):

  • Black peppercorn ─ 1 piece;
  • Salt ─ 4.5-5 g;
  • Bay leaf ─ 1 piece.

Turkey Drumstick in Autoclave

Preparation method:

  1. Remove the meat from the drumstick along with the skin. Small bones do not need to be collected. Cut the meat into large pieces (to fit in the jar).
  2. Place a bay leaf and peppercorns at the bottom of the jar. Pack the meat tightly, and sprinkle salt on top. Fill with water, leaving 2 cm from the top of the jar.

Seal the jars and place them in the autoclave at 110°C for 30 minutes.

Turkey Pâté in Autoclave

Ingredients:

  • Turkey ─ 0.5 kg;
  • Onion ─ 1 piece;
  • Sunflower oil ─ 100 g;
  • Salt ─ 0.5 tsp;
  • Black pepper (ground) ─ ¼ tsp;
  • Spices to taste.

Turkey Pâté in Autoclave

Preparation method:

  1. Peel and chop the onion into pieces. Also, cut the turkey into small pieces.
  2. Mix the chopped ingredients in a large bowl with oil and grind through a meat grinder. For a smoother consistency and to eliminate lumps, you can additionally blend with a blender.
  3. Add salt, pepper, and other spices to taste. We recommend using poultry seasoning.

Place the mixture into jars and seal. Process at 110°C for 30 minutes.

Turkey Stew in Autoclave

Ingredients (for 5 liters):

  • Turkey ─ 4 kg;
  • Salt ─ 25 g;
  • Bay leaves ─ 10 pieces;
  • Black peppercorns ─ 20 pieces;
  • Allspice ─ 20 pieces;
  • Broth.

Turkey Stew in Autoclave

Preparation:

  1. Cut the turkey into small pieces, separating from the bones.
  2. Place the bones, black and allspice peppers, and bay leaves in a pot and cook a thick broth.
  3. Mix the meat thoroughly with salt and place it in jars.
  4. Fill the jars with broth, leaving 2 cm from the top, and seal with lids.

Process in the autoclave for 30 minutes at 110°C.
