Turkey in an Autoclave: Recipe
Among domestic animals, turkey meat is especially valued. Its dietary properties, due to the relatively low amount of cholesterol, have long been known. Thanks to this, the meat is easily absorbed in the human body. Turkey contains a large amount of vitamins (A and E) and microelements (potassium, iron, calcium, sodium, etc.). Compared to other types of domestic animal and poultry meat, turkey contains more iron and less fat.
Turkey is recommended as one of the first types of meat for a baby's first complementary feeding. Also, due to the content of folic acid, it is recommended for pregnant and breastfeeding women. Other cases when turkey meat should be consumed include insomnia, depression, susceptibility to stress, and heavy physical exertion.
One of the ways to cook turkey is canning, and if you make it in an autoclave, it is also a reliable way to get rid of unwanted bacteria.

For good canned food, in addition to using an autoclave, it is necessary to choose high-quality raw materials ─ in our case, turkey meat. There are several ways to check its freshness and quality:
- The skin should be intact, without any spots or bruises, and of a light color;
- As with any type of poultry meat, the aroma should be mild, barely noticeable;
- Turkey meat is usually dry, so when pressed, no liquid should appear and the shape should return.
The best choice for canning is fresh chilled meat, but if only frozen raw materials are available, this is not a big problem. It is important that the turkey is frozen only once and that the correct thawing technique is used.
Turkey Drumstick in an Autoclave
This is one of the simplest turkey recipes, but with an extremely tender taste. For this recipe, we need turkey drumsticks, as well as seasonings (per half-liter jar):
- black peppercorn ─ 1 pc.;
- salt ─ 4.5–5 g;
- bay leaf ─ 1 pc.

Cooking method:
- Cut the meat along with the skin from the drumstick. There is no need to collect small bones. Then cut the meat into large pieces (so that they fit in the jar).
- Put the bay leaf and peppercorn on the bottom of the jar. Pack the meat tightly, sprinkle salt on top. Pour in water, leaving 2 cm to the rim of the jar.
- If the thermometer is at the top of the container – cook for 30 minutes at 110 degrees.
- If the thermometer is at the bottom of the container – cook for 30 minutes at 120 degrees.
Turkey Pâté in an Autoclave:
Ingredients:
- turkey ─ 0.5 kg;
- onion ─ 1 pc.;
- sunflower oil ─ 100 g;
- salt ─ 0.5 tsp.;
- ground black pepper ─ ¼ tsp.;
- spices to taste.

Cooking method:
- Peel the onion and cut into pieces. Also cut the turkey into small pieces.
- Mix the chopped ingredients in a large bowl together with the oil and pass through a meat grinder. For better consistency and to get rid of lumps, you can additionally blend with a blender.
- Add salt, pepper, and other spices to your taste. We recommend using poultry seasoning.
Place into jars and seal.
- If the thermometer is at the top of the container – cook for 30 min. at 110 degrees.
- If the thermometer is at the bottom of the container – cook for 30 min. at 120 degrees.
Turkey Meat Stew in an Autoclave
Ingredients for 5 L:
- turkey ─ 4 kg;
- salt ─ 25 g;
- bay leaves ─ 10 pcs.;
- black peppercorns ─ 20 pcs.;
- allspice peppercorns ─ 20 pcs.;
- broth.

Cooking:
- Cut the turkey into small pieces, separating from the bones.
- Place the bones together with black and allspice pepper and bay leaves in a pot and cook a thick broth.
- Mix the meat thoroughly with salt and place into jars.
- Pour the broth into the jars, leaving 2 cm to the rim, and close with a lid.
- If the thermometer is at the top of the container – cook for 30 min. at 110 degrees.
- If the thermometer is at the bottom of the container – cook for 30 min. at 120 degrees.
