
Porridge with Meat, Prepared in an Autoclave
Canned homemade porridges are an excellent option for a ready-made meal from natural ingredients, which is quite easy to reheat in a pan or microwave. If you cook porridges in an autoclave at home, you can quickly and effortlessly prepare a large number of tasty, healthy, and hearty preserves from various cereals. The most common are buckwheat, rice, and pearl barley. But in general, there are practically no restrictions on the types of cereals.
How to Cook Porridges in an Autoclave
Traditionally, winter porridges in the form of preserves are cooked with meat. To make the taste richer, it is better to fry the pieces of meat. By the way, the meat should be cut into large pieces; otherwise, during sterilization it will fall apart into fibers. You can add not only whole meat to the porridge, but also minced meat (it goes especially well with pearl barley). You can cook porridges in pure form, add sautéed vegetables, make various gravies, and season with sautéed vegetables or tomato paste.
The process of high-temperature sterilization under pressure allows you to significantly simplify the preparation of porridge preserves. You can pour raw cereals into the jars—they will cook perfectly in the autoclave. At the same time, the volume of cereals with sauce and meat should not exceed ½ of the jar—during cooking the porridge will increase and eventually occupy the entire container. Fill the container with water, leaving 2 free centimeters to the lid—again, taking into account the increase in volume of the contents. The temperature and cooking time depend on the type of cereal. Recipe for Rice Porridge with Poultry in an Autoclave
For the preparation of this delicious preserve you will need:
- round rice – 1 kg;
- chicken (wings can be used) – 3 kg;
- onion – 2 pcs.;
- carrot – 2 pcs.;
- butter – 100 g;
- salt, bay leaf, pepper.
Rice porridge with meat in an autoclave is prepared in the following sequence: divide the thoroughly washed wings into 2 halves (to do this, cut each wing at the joint). Separate the thin and the meaty parts. From the thin ones, cook a broth without salt. Pour 250 ml of the finished broth into each clean jar intended for canning.
Next, peel the onion and chop into half rings. Wash the carrot, peel it, and grate it coarsely. Sauté the carrot with the onion, adding the large parts of the wings. Then mix the ingredients with the thoroughly washed rice.
Add 4 peppercorns and 1 bay leaf to the broth in the jars. Then place the mixture of chicken and rice. Put butter on top, salt to taste. Close the jars with metal lids and proceed to sterilization in the autoclave.
Rice porridge for winter can also be prepared without meat—for example, with vegetables. Choose the following ingredients:
- round rice – 200 g;
- tomatoes – 3 kg;
- onion – 1 kg;
- carrot – 1 kg;
- sweet red pepper – 1 kg;
- sugar – 200 g;
- sunflower oil – 300 g;
- salt – 100 g.
Wash the vegetables thoroughly. Cut the tomatoes into large pieces. Grate the carrot together with the onion. Cut the pepper as you like: into strips or half rings. Heat the oil strongly in a pan (preferably to a boil), add sugar and salt. Carefully put the onion and carrot into it. Stew them for up to 10 minutes. Rinse and dry the rice. Add the cereal to the jars, place a layer of tomatoes and pepper on top, and above that the sautéed vegetables. Alternatively, you can pre-mix all the ingredients and then place them into the jars. Seal the containers and start sterilizing for the required time.

Recipe for Buckwheat Porridge with Meat in an Autoclave
The correct preparation of porridges in an autoclave at home based on buckwheat requires the following ingredients:
- buckwheat – 700 g;
- onion – 2 pcs.;
- pork – 1.5 kg;
- carrot – 2 pcs.;
- salt – one third tsp per 1 jar;
- bay leaf – 1 pc. per jar;
- black pepper – to taste.
Wash the meat and cut it into pieces. Rinse the cereal. Peel and chop the carrot and onion, make a standard sauté. When it is ready, add the meat and the cereal. In half-liter jars, put bay leaves, the mixture of cereal with sauté and meat (remember that it should be no more than ½ of the jar), sprinkle salt on top and add 3 peppercorns each. Add hot boiled water to the containers. After sealing the lids, proceed to the stage of sterilizing the containers in the autoclave.
You can also cook buckwheat porridge with vegetables in an autoclave—an excellent option for vegetarians. For this you need:
- buckwheat – 500 g;
- tomatoes – 3 kg;
- sweet pepper – 1 kg;
- carrot – 1 kg;
- onion – 1 kg;
- 6% vinegar solution – 100 ml;
- salt – 2 tbsp.;
- sugar – 200 g;
- sunflower oil, spices.
Wash and peel the vegetables. Pass the tomatoes through a meat grinder or puree with a blender. Finely chop the onion, grate the carrot. Cut the pepper into strips. Fry the pepper, onion, and carrot in sunflower oil separately. Pour the cereal into the jars, add the juice of the pressed tomatoes, the sauté, vinegar, salt and sugar, spices. Seal the containers hermetically and use the autoclave for complete preparation of the preserves.
Recipe for Pearl Barley Porridge with Meat in an Autoclave
This is a classic stew with porridge in an autoclave, for the preparation of which you need (calculation per half-liter jar):
It is better to pre-soak the pearl barley—for at least 2 hours. Cut the pork into large pieces—the pieces should be at least 4 cm long. From the peeled and chopped carrot and onion, make a classic sauté. In well-washed jars, put pork fat, pieces of meat, salt and spices. Add pearl barley on top, and then the sauté. After that, pour the containers with slightly cooled boiling water and twist (seal). This is enough to proceed to the stage of sterilizing the preserves in the autoclave.
Recipe for Pea Porridge in an Autoclave
Cooking porridge with meat in an autoclave based on split peas is based on the following components (calculation per half-liter jar):
Pre-soak the peas (preferably overnight). Rinse and chop the meat. Peel the onion and carrot, chop and fry them in a pan. Put lard on the bottom of the jars, then pieces of meat, then spices and salt. Next, pour in the peas, put the sauté on top of it, and pour slightly cooled boiling water up to the “shoulders” of the jar. Then close the containers hermetically, place them in the autoclave and start sterilizing. Remove the finished preserves after the autoclave has cooled.
