Jam in an Autoclave
Surely everyone remembers that childhood moment when they first tasted jam and fell in love with its sweet flavor. Everyone has different preferences: some like traditional apple jam, others prefer plum, and some enjoy raspberry. There are so many varieties of jam. In this article, we offer you original jam recipes with interesting ingredients that can be prepared in an autoclave.
Apple Jam with Dried Fruits
For preparation, you will need:
- Sweet apples ─ 1.5 kg;
- Dried fruits ─ 1 cup;
- Sugar ─ 2 kg;
- Water ─ 1 cup.

Preparation method:
- Thoroughly wash the apples and peel them. Cut the peeled apples into small slices.
- Make a syrup from sugar and water, and pour it over the sliced apples and dried fruits (you can choose any dried fruits ─ the more variety, the richer the jam's flavor).
- Bring the jam to a boil and cook for 3 minutes on high heat and 3 minutes on low heat, stirring constantly.
- After cooking, let the mixture cool down, and after a few hours, repeat the previous step.
Afterward, pour the warm jam into jars. Preserve in the autoclave for 10 minutes at 100°C.

Gooseberry Jam
Ingredients:
- Gooseberries – 1 kg
- Cherry leaves – 10 pcs
- Water – 2 cups
- Sugar – 1.5 kg

Preparation:
- Wash the gooseberries and place them in a container. Choose ripe berries without damage, and remove any remaining stems.
- Add the washed cherry leaves and pour sugar syrup over the mixture.
- Bring the mixture to a boil and let it cool for 4 hours.
- Repeat the previous step, then pour the jam into jars (remove the cherry leaves).
Autoclave at 90°C for 10 minutes.
Cherry Chocolate Jam
Ingredients:
- Cherries – 1 kg
- Cocoa – 1 tbsp
- Citric acid – 1 tbsp
- 72% chocolate – 100 g
- Sugar – 0.5 kg

Preparation:
- Wash the cherries and remove the pits.
- Blend the prepared cherries, add sugar, and let it sit for 30 minutes to release the juice.
- Heat the mixture and bring it to a boil, then add cocoa and citric acid. Boil for another 5 minutes.
- Chop the chocolate and add it to the hot mixture, stirring until fully melted.
Pour the warm jam into jars and autoclave for 15 minutes at 90°C.
Pear and Ginger Jam
Ingredients:
- Pears – 1.5 kg
- Ginger root – 30 g
- Lemon – 0.5 pcs
- Sugar – 700 g
- Cloves (whole) – to taste

Preparation:
- Wash and peel the pears. Slice them into wedges or cubes. Chop the ginger.
- Squeeze juice from half a lemon.
- Mix the chopped ingredients with sugar and lemon juice in a deep enamel container. Cover the container tightly with plastic wrap and let it infuse for an hour.
- Place the container on the stove and boil for 15 minutes, skimming off the foam.
- Pour the jam into jars, placing a few clove buds on top.
Autoclave for 15 minutes at 90°C.
Lemon and Mint Jam
Ingredients:
- Lemons – 1 kg
- Sugar – 2 kg
- Water – 0.4 liters
- Mint leaves – 4-5 pcs

To prepare this jam, follow these steps:
- Wash the lemons and let them dry completely. Then, slice them and remove the seeds.
- Place the prepared lemons in a container, add mint and water, and cook on high heat for 10 minutes. Remove from heat, cover, and let it sit in a cool place for 10 hours.
- Strain the juice from the mixture. Discard the mint leaves.
- Add sugar to the juice and bring it to a boil.
- Pour the lemon syrup over the previously separated lemons and cook on low heat, bringing it to a boil.
The jam is ready. Pour it into jars and autoclave for 15 minutes at 90°C.
