- Dissolve the enzyme in 0.2 cups of warm water and pour it into the heated milk. Stir well.
- Leave the milk at 35 degrees Celsius for 60 minutes and wait for the curd to form.
- Cut the curd into cubes.
- Heat the milk to 42 degrees Celsius, stirring the cheese continuously. The cubes should turn into granules.
- Drain the mass through a sieve or colander, and wait for the whey to drain. Leave the firm cheese in the refrigerator overnight. The next day, proceed to the next stage.
- After a minimum of 24 hours from the first stage, you can start shaping the suluguni. Wear 2 pairs of gloves: cotton and rubber. This will allow you to work comfortably with hot water.
- Cut the cheese into cubes and immerse them in boiling water for 5 minutes. The cheese cubes should completely melt. You can occasionally drain the cooled water and add new hot water.
- When the cheese melts again, drain the whey. Then form the layered structure of suluguni. Use your hands to stretch and fold the cheese, repeating the process.
- When the cheese resembles suluguni in texture, place it in the refrigerator for 2 hours.
- Next, prepare a brine solution (200 g of salt per liter of water) and place the cheese in it for a minimum of 10 hours.
In the morning, you can remove the finished cheese, rinse it from the brine, and taste it. You should get a tender cheese with a rich flavor.
