  • Zucchini2 kg
  • Sunflower oil200 g
  • Sugar30 g
  • Bay leaf5 g
  • Water100 g
  • Dill50 g
  • Parsley50 g
  • Chili pepper30 g
  • Garlic30 g
  • Salt40 g
  • Black peppercorns10 g
  • Allspice5 g
  • Vinegar20 g

Step 1

Wash the zucchini — if they're fresh, there's no need to peel them.

Slice the zucchini into rounds, not too thin, about 1 cm thick.

Add oil to the zucchini and pour some into the pan.

Add the spices: salt and pepper.

Fry the zucchini in batches on both sides.

Finely chop the herbs and place them in a bowl.

  • If the thermometer is in the upper part of the vessel — 105°C, 5 minutes.
  • If the thermometer is in the lower part of the vessel — 115°C, 5 minutes.
