Barley Porridge with Meat in an Autoclave
Stew with barley is a traditional "army" canned food. Despite the low cost of the grain used, it turns out very tasty because the barley cooks well and absorbs the spices. This type of preservation can also be made at home - stew with barley in an autoclave is very easy to prepare, hearty, and delicious.
Preparing Barley Grain in an Autoclave
Few people like barley, but the secret is that many cook it incorrectly. For the porridge to be tasty, it needs to be soaked and cooked for a long time (preferably in a water bath). However, the sterilization process in an autoclave allows you to skip at least one inconvenient step - cooking. The grain will cook during the thermal processing in the autoclave. Therefore, you can put raw grain into the jars.
However, it wouldn't hurt to soak the barley beforehand. To do this, rinse the grain thoroughly, and then soak it in the proportion of 1 cup of grain to 1 liter of water. Soak for about 2 hours (or you can leave it overnight). Afterward, it is recommended to rinse the grain again. What does this do? The porridge will cook better and have a tender taste.
Barley porridge surpasses other grains in composition (including microelements, amino acids, and vitamins). It has the highest selenium and phosphorus content. This is especially valuable for children and the elderly. It can be used as an alternative to more expensive buckwheat and rice. The energy value of the product (referring to the porridge without meat) is 109 calories per 100 g.
At home, barley with meat in an autoclave can be prepared based on a classic recipe (with pork), with the addition of vegetables, or with other types of meat: beef, lamb, or poultry. Meat can also be added raw. However, it is better to prepare the vegetables by sautéing them first - it will taste better.
Barley proportions: 100 g – 4 tbsp and a pinch, 150 g – 6 tbsp with a pinch, 200 g – 8 tbsp + a pinch, and 250 g – 10 tbsp.
