You can also make such preserves at home—the stew with pearl barley in an autoclave is very simple to prepare, hearty, and delicious.


Cooking Pearl Barley in an Autoclave


Few people love pearl barley—but the secret is that many cook it incorrectly. To make the porridge tasty, it needs to be soaked and cooked for a long time (preferably in a water bath). However, the sterilization process in an autoclave allows you to eliminate at least one inconvenient stage—boiling. The grain will cook during the heat treatment in the autoclave. Therefore, you can pour raw grain into the jars.

But pre-soaking the pearl barley won’t hurt. To do this, rinse the grain thoroughly, then soak it in a ratio of 1 cup of grain to 1 liter of water. Soaking time is about 2 hours (but you can also leave it overnight). Afterwards, it is recommended to rinse the grain again. What does this give? The porridge will cook better and have a delicate taste.

Pearl barley, in terms of composition (trace elements, amino acids, and vitamins), surpasses other types of grains. It contains the most selenium and phosphorus. This is especially valuable for children and the elderly. It can be used as an alternative to the more expensive buckwheat and rice. The energy value of the product (porridge without meat) is 109 calories per 100 g.

At home, pearl barley with meat in an autoclave can be prepared based on the classic recipe (with pork), with the addition of vegetables, and also with other types of meat: beef, lamb, poultry. In this case, the meat can also be placed raw. As for vegetables, it’s better to make a sauté—it will taste better.

Pearl barley proportions: 100 g – this is 4 tbsp. plus a pinch, 150 g – 6 tbsp. with a pinch, 200 g – 8 tbsp. + a pinch, and 250 g – this is 10 tbsp.

Army Recipe for Pearl Barley with Stew in an Autoclave

For this simple yet tasty preserve, you will need (calculated for one 0.5-liter jar):

  • pearl barley – 100 g;
  • pork – 100 g;
  • pork fat – 50 g;
  • salt – 1 tsp;
  • bay leaf – 0.5 pc.;
  • black pepper – 5 peas.

Take washed jars, place a layer of fat on the bottom, put meat cut into medium pieces on top, sprinkle with salt and spices. Pour the grain on top and fill with water, leaving at least 2 cm to the lid (this is important, as the porridge will expand during cooking).

The prepared jars are sealed with metal lids and placed in the autoclave. Pour water into it so that it is 2 cm above the lids. Close the autoclave and pressurize to 1 atmosphere, then start heating. As soon as the temperature reaches 110 degrees Celsius (if the thermometer is located on top) and 120 degrees (if the thermometer is located below on the body), start maintaining it at this level and time 40 minutes. Then turn off the heat, wait for cooling to 30 degrees Celsius, and release the air. After that, you can open the lid and remove the jars.

This very tasty pearl barley porridge with meat in an autoclave is prepared from the following ingredients (calculated for a 0.5-liter jar):

  • pork – 100 g;
  • fat – 50 g;
  • pearl barley – 100 g;
  • salt – 1 tsp;
  • carrot and onion sauté – 1 tbsp.;
  • bay leaf – 1 pc.;
  • pepper – 5 peas.

Don’t forget to pre-soak the pearl barley. Wash the pork and cut it into pieces about 4 cm. Wash the jars. Chop the carrot and onion, fry in sunflower oil. Layer the ingredients as follows: first the fat, then the meat, next the salt, spices, pearl barley, and sauté. Fill with water (preferably boiled), leaving 2 cm to the top.

  • If the thermometer is located in the upper part of the vessel – cook for 40 min at 110 degrees.
  • If the thermometer is located in the lower part of the vessel – cook for 40 min at 120 degrees.

Pearl Barley Porridge in an Autoclave with Lamb Stew


For this preserve you need the following components:

  • lamb (preferably fattier) – 500 g;
  • pearl barley – 2 cups;
  • carrot and onion – 1 pc. each;
  • bell pepper – 1 pc.;
  • spice mix “Italian herbs” – 2 tsp;
  • pickled mustard seeds – 1 tsp.

Pearl barley porridge in an autoclave is easy to prepare: mince the lamb, chop the vegetables and fry them in sunflower oil. If desired, you can also lightly fry the lamb until a golden crust appears. Put the meat, spices, and salt into the jars, pour the grain on top, and place the sautéed vegetables on it. Then pour the jars with boiled water and close the lids. Sterilization conditions in the autoclave:

  • If the thermometer is located in the upper part of the vessel – cook for 40 min at 110 degrees.
  • If the thermometer is located in the lower part of the vessel – cook for 40 min at 120 degrees.


Beef Stew with Pearl Barley in an Autoclave


This interesting recipe for stew with pearl barley in an autoclave requires the following ingredients:

  • beef – 2 kg;
  • pearl barley – 1 kg;
  • onion – 2 pcs.;
  • salt and pepper – to taste.

Preparation is as follows: cut the meat into cubes and simmer over low heat until half-cooked (you can skip this if you want to keep springy pieces in the porridge). Be sure to remove the foam. Finely chop the onion. Put the meat, onion, porridge, salt, and pepper into the jars, and pour them with the broth in which the beef was cooked. After sealing, place the jars in the autoclave.

Poultry Preserves with Pearl Barley in an Autoclave


To prepare this preserve you need:

  • poultry meat – 2 kg;
  • pearl barley – 1 kg;
  • onion – 2 pcs.;
  • clove – 1 pc. per 0.5-liter jar;
  • bay leaf – 3 pcs. per jar;
  • pepper – 5 peas per jar.

Chop the meat. Cut the onion finely and lightly fry in sunflower oil. In the washed jars, place the grain, meat, salt and spices, and fried onion. Fill the contents with boiled water up to the “shoulders” of the jar. After that, you can seal the containers and send them to the autoclave. The sterilization process is standard for porridge with stew –
