Step 1

Cut the chicken fillet and thigh meat into cubes approximately 3–4 cm in size.

Transfer the meat to a large bowl so that it is easy to mix with the spices.

Add salt, sugar and ground black pepper to the meat.

Mix the chicken thoroughly with the spices so that every piece is evenly seasoned and absorbs the flavour.
