Pork Pâté


Ingredient proportions:

  • pork belly — 75%;
  • pork liver — 25%.

Seasonings (per 1 kg of boiled meat):

  • dried marjoram — 3 g;
  • dried basil — 1 g;
  • ground white pepper — 3 g;
  • nutmeg — 2 g;
  • garlic — 2-3 cloves or 1.5 g dried;
  • onion — 1 kg;
  • oil.

Preparation method:

  1. Peel 700 grams of onion and place it in a pot with water and a little salt. Bring to a boil.
  2. Cut the meat and liver into small pieces and boil them separately for 5 minutes each. Remove the skin from the boiled pork.
  3. Peel the remaining onion and fry in oil until golden.
  4. Blend the meat and liver in a blender. Add onion, spices, and the broth left after boiling the meat to get a sour cream-like mass.
  5. Fill jars about ¾ full with the pâté, as it will expand during sterilization.

Preserve in the autoclave:

  • If the thermometer is at the top of the container — 40 minutes at 110°C.
  • If the thermometer is at the bottom of the container — 40 minutes at 120°C.
After finishing the process, turn the jars upside down.


Pâté from Chicken and Pork Liver


Ingredients:

  • frozen liver — 2.8 kg;
  • onion — 4 pcs.;
  • carrot — 4 pcs.;
  • butter — 400 g;
  • salt — 10 g/kg;
  • ground black pepper;
  • nutmeg.

Preparation method:

  1. Defrost the liver, rinse thoroughly, and clean. The ratio of pork to chicken liver is not important.
  2. Blanch the two types of liver separately in boiling water: pork — 20 minutes, chicken — 10 minutes.
  3. Peel and chop the onion and carrot: dice the onion into medium cubes, grate the carrot on a coarse grater.
  4. Sauté the vegetables in butter until done.
  5. Pass all ingredients through a meat grinder, then additionally blend the mixture.
  6. Add spices to taste and mix thoroughly, fill jars leaving 3 cm from the top.

Close the jars with lids and place them in the autoclave. The autoclaving process for this recipe takes

  • If the thermometer is at the top of the container — 40 minutes at 110°C.
  • If the thermometer is at the bottom of the container — 40 minutes at 120°C.

  • “Tourist” Pâté


    Ingredients:

    • pork liver — 1.8 kg;
    • pork meat — 1.8 kg;
    • lard — 5 kg;
    • onion — 12 pcs.;
    • chicken eggs — 12 pcs.;
    • salt — 2 tbsp.

    Preparation method:

    1. Boil the liver until ready and grind it together with raw meat and lard in a meat grinder.
    2. Peel the onion and pass it through a meat grinder or chop finely.
    3. Add eggs, salt, and mix thoroughly until a homogeneous mass forms.

    Place the pâté in jars and close with lids. Preserve in the autoclave

    • If the thermometer is at the top of the container — 40 minutes at 110°C.
    • If the thermometer is at the bottom of the container — 40 minutes at 120°C.

    • Pâté from Pork Head


      Ingredients:

      • pork head — 1 pc.;
      • pork liver — 1 pc.;
      • semolina — 1 cup;
      • onion — 6 pcs.;
      • chicken eggs — 7 pcs.;
      • milk — 0.5 l;
      • salt;
      • ground black pepper;
      • spices to taste.

      Homemade chicken liver pâté with olives

      Preparation method:

      1. Boil the head until done, cool, and separate the meat from the bones.
      2. Pass the meat, onion, and raw liver through a meat grinder.
      3. Boil the milk and leave it to cool completely.
      4. Add eggs, cold milk, and semolina to the minced mass. Also add spices to taste and mix thoroughly.

      Place the prepared mixture into jars, leaving 3 cm free space from the top. Sterilize
