Pork Pâté


Ingredient proportions:

  • pork belly — 75%;
  • pork liver — 25%.

Seasonings (per 1 kg of boiled meat):

  • dried marjoram — 3 g;
  • dried basil — 1 g;
  • ground white pepper — 3 g;
  • nutmeg — 2 g;
  • garlic — 2-3 cloves or 1.5 g dried;
  • onion — 1 kg;
  • oil.


Preparation method:

  1. Peel 700 grams of onion and place it in a pot with water, adding a little salt. Bring to a boil.
  2. Cut the meat and liver into small pieces and boil them in hot water separately for 5 minutes each. Remove the skin from the boiled pork.
  3. Peel the remaining onions and fry them in oil until golden brown.
  4. Blend the meat and liver in a blender. Add the onion, seasonings, and broth remaining from boiling the meat to achieve a creamy consistency.
  5. Fill the jars with pâté about ¾ full, as the product will expand during sterilization.

Preserve in the autoclave for 40 minutes at 110 degrees. After this process, turn the jars upside down.

Chicken and Pork Liver Pâté


Ingredients:

  • frozen liver ㅡ 2.8 kg;
  • onions ㅡ 4 pcs.;
  • carrots ㅡ 4 pcs.;
  • butter ㅡ 400 g;
  • salt ㅡ 10 g/kg;
  • black pepper, ground;
  • nutmeg.


Preparation method:

  1. Defrost the liver at room temperature. Peel the vegetables and cut them into small pieces.
  2. In a large pot, blanch the two types of liver separately in boiling water: pork liver for 20 minutes, chicken liver for 10 minutes.
  3. Peel and chop the onions and carrots: dice the onions and grate the carrots on a coarse grater.
  4. Sauté the vegetables in butter until golden brown.
  5. Pass all ingredients through a meat grinder twice, then blend the resulting mass further.
  6. Add salt, pepper, and nutmeg to taste. Fill the jars with the pâté, leaving about 3 cm at the top.

Preserve in the autoclave for 90 minutes at 110 degrees. After the process, turn the jars upside down.


"Tourist" Pâté


Ingredients:

  • pork liver ㅡ 1.8 kg;
  • pork meat ㅡ 1.8 kg;
  • lard ㅡ 5 kg;
  • onions ㅡ 12 pcs.;
  • chicken eggs ㅡ 12 pcs.;
  • salt ㅡ 2 tbsp.


Preparation method:

  1. Boil the liver until done and grind it in a meat grinder together with the raw meat and lard.
  2. Peel and grind the onions or finely chop them.
  3. Add the eggs and salt to the minced mixture and mix thoroughly until homogeneous.

Place the pâté in jars and seal with lids. Preserve in the autoclave for 40 minutes at 110 degrees.


Pâté from a Pig's Head


Ingredients:

  • pig's head ㅡ 1 pc.;
  • pork liver ㅡ 1 pc.;
  • semolina ㅡ 1 cup;
  • onions ㅡ 6 pcs.;
  • chicken eggs ㅡ 7 pcs.;
  • milk ㅡ 0.5 l;
  • salt;
  • black pepper, ground;
  • spices to taste.


Preparation method:

  1. Boil the head until done, cool, and separate the meat from the bones.
  2. Pass the meat, onions, and raw liver through a meat grinder.
  3. Boil the milk and let it cool completely.
  4. Add the eggs, cold milk, and semolina to the minced mixture. Also, add spices to taste and mix thoroughly.

Distribute the resulting mixture into jars, leaving 3 cm of free space from the top. Sterilize at 110 degrees for 40 minutes.
