What is the difference between a black steel autoclave and a stainless steel autoclave?

Black steel autoclaves are cheaper, but they have a significant drawback — susceptibility to corrosion. Even with powder coating, over time rust appears under the influence of high temperature and pressure in a water environment.
Stainless steel autoclaves are more expensive, but much more practical for regular autoclaving and have many advantages:
  • not afraid of corrosion
  • last longer
  • look neat even after years of use

How to preserve the light color of mushrooms when canning in an autoclave?

In industrial production, mushrooms are often treated with sulfur dioxide, which is unsafe for home canning.
For a home autoclave we recommend:
  • blanch mushrooms in water with citric acid or lemon juice
  • or add a small amount of citric acid directly into the jar
This will help preserve the light color of champignons without harm to health.

Is it necessary to build initial pressure in the autoclave?

It all depends on the type of container:
  • SKO lids and tin cans → initial pressure of 1 bar is required
  • Twist-Off lids and retort pouches → no initial pressure required
This is an important point that directly affects safety and tightness.

When should you open the autoclave to get the Twist-Off lid “click”?

If you want:
  • guaranteed vacuum
  • a characteristic click when opening
Do not wait for the autoclave to cool down completely. It is recommended to open it at a temperature of about 70 °C. When fully cooled, the sound may be weak or absent — this does not mean the preservation is of poor quality.

How to properly tighten the autoclave lid clamps?

The clamps must be tightened:
  • evenly
  • without excessive force
  • only with the special wrench included in the kit
Hand tightening is not sufficient for tightness — this is also stated in the instructions for UTEHO autoclaves.

Why doesn’t the broth gel after autoclaving?

The reason is not the recipe, but the type of meat. Gelatin requires collagen, which is found in:
  • bones
  • ribs
  • shank
  • skin
If only fillet is used, the broth will remain liquid — this is normal.

What should be done first: drain the water or remove the jars?

Correct sequence:
  • First — remove the jars
  • Second — drain the water
Draining water with jars inside is inconvenient and dangerous. If the water is hot (above 60 °C), we recommend using special tongs for safe jar removal.

How many retort pouches fit into an autoclave?

The calculation is very simple: Number of retort pouches = number of 0.5 L jars
Example: A24 autoclave — 24 jars of 0.5 L or 24 retort pouches
