Chili cucumbers in tomato brine is an original homemade canning recipe that combines crunchy pickled cucumbers, a rich tomato marinade, and a pleasant kick of chili pepper. This preserve is a wonderful alternative to classic pickled cucumbers and will pleasantly surprise you with its rich, balanced flavor.

The main feature of this recipe is the spiced tomato brine. It gives the cucumbers a distinctive aroma and a light sweet-and-sour note, while the chili pepper adds moderate heat that harmoniously complements the flavor. The result is crunchy cucumbers with a vivid tomato aftertaste.

Ingredients for Chili Cucumbers in Tomato Brine

  • Cucumbers2 kg
  • Chili pepper1 pod
  • Dill (umbels)100 g
  • Garlic20 g
  • Tomato paste100 g
  • Sugar60 g
  • Apple cider vinegar80 g
  • Oil80 g
  • Water800 g
  • Salt80 g
  • Black peppercorns10 g
  • Bay leaf5 g
  • Allspice10 g

Step 1

Wash the cucumbers and soak them in cold water for 2–3 hours.

Trim the top and bottom of each cucumber.

Place dill umbels at the bottom of each jar.

Add peeled garlic cloves to the jars.

Slice the chili pepper and add it to the jars.

Add the spices to the jars: bay leaf, allspice, and black peppercorns.

Tightly pack the jars with the prepared cucumbers.

Prepare the tomato marinade: mix 100 grams of tomato paste, 60 grams of sugar, 80 grams of salt, 80 grams of apple cider vinegar, 80 grams of oil, and 800 grams of cold water. Stir thoroughly until smooth.

Before sealing, be sure to wipe the rim of the jars so the area where the lid sits stays clean.

  • If the thermometer is in the upper part of the vessel — 80 degrees, 5 minutes.
  • If the thermometer is in the lower part of the vessel — 90 degrees, 5 minutes.
